Glazed Pumpkin with Creamy Peanut Lime Sauce | The Comidista | Gastronomy

Just when you thought there was no way to make pumpkin sweeter and tastier, here comes this recipe before you. Roasting this vegetable – the benefits of which we already know very well – improves even more when a glaze is added to the equation. No, we are not talking about the typical sugar icing that is put on cakes, but about a sauce that we prepare to brush the pumpkin and give it shine, color and much more flavor.

The latter, above all, occurs because it contains a sweet ingredient (honey), a salty one – soy sauce -, a spicy one which in this case is sriracha, although it could be any other, a fat (olive oil) and various flavorings such as garlic, ginger and sesame oil. In turn we serve it with a creamy peanut butter sauce, where the acidity of the lime juice completes everything.

You can serve this dish as an appetizer in any dinner with guests and you will be the protagonists of autumn, but it is also a perfect recipe for everyday life: accompanying it with white or brown rice, a green leaf salad and a soft egg you will have a complete and delicious meal.

Difficulty: It is not necessary to have a very high IQ

Ingredients

For 4 people

  • 800 g of pumpkin without counting the seeds, preferably of the round variety
  • Olive oil
  • Salt

For the icing

  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • ½ tablespoon Sriracha or any other hot sauce
  • 1 teaspoon sesame oil
  • 1 clove of garlic
  • 1 piece of ginger, about 10 g

For the sauce

  • 80g peanut butter
  • The juice of a lime
  • 2 tablespoons of cold water
  • 1 teaspoon ground red pepper or red pepper flakes
  • it rises up
  • The green part of Chinese chives
  • toasted sesame seeds

Instructions

Heat the oven to 200 ºC.

Wash the pumpkin well. Remove the seeds and cut it into two centimeter thick segments. Arrange them with the skin facing downwards – i.e. with the segments “standing” – on a baking tray with baking paper, oil and salt. Cook for 30 minutes.

In the meantime, prepare the icing by mixing all the ingredients well.

Cut the green part of the onion into very fine julienne strips, lengthwise. Place it in a bowl of ice water to curl it.

Once the cooking time has passed, place the pumpkin segments and brush them with half the mixture. Cook for another 10 minutes. Turn them over, brush them again and bake until golden and tender.

6.

Prepare the sauce by mixing all the ingredients well until smooth. Serve it on the bottom of the plate or tray you will be using.

7.

Arrange the roasted pumpkin segments on top with any leftover cooking juices. If desired, add the previously drained chives and sesame seeds.
