The new edition of the Michelin Guide adds 30 new stars to the Spanish gastronomic map. Among the 25 debutants there are Faralá from Granada and Èter from Basque, who debut with their first recognition; and among the five veterans who are climbing positions there are Albert Adrià with Enigma and Ramón Freixa, who recovers the double distinction for his Atelier. The 16 locations that already fell into this category remain in the three-star Olympus.

With the new additions, the Michelin selection for 2026 remains at 306 establishments: 16 with three stars, 37 with two stars and 253 with one.
The guide continues to focus above all on innovative cuisines: 94% of three-star restaurants offer creative dishes. This category also dominates among two-star restaurants (70%). In the case of chefs who have a single distinction, modern cuisine prevails.
The refuge of traditional gastronomy continues to be among the Bib Gourmand, the most convenient restaurant category.
Among the starred restaurants only seven can eat for less than 60 euros. All those with three stars exceed 100 euros for dinner. The following graph shows the distribution of restaurant prices, according to data extracted from the guide.
Among the newcomers, the price of Ochando in Cadiz stands out: it is the only restaurant where you can eat for less than 35 euros, according to the guide’s data.
The cheapest option
The Bib Gourmand category, which rewards value for money, will contain 204 proposals for this edition. In the following table you can consult the cheapest options from the Michelin guide.
Price is not an obstacle to reaching higher categories. The aforementioned Ochando was already among the restaurants distinguished with the Bib Gourmand category. Furthermore, the vast majority of those who received the first star also fell within the guide’s broader list of places recommended.
