In Paris, Guillaume Goupil’s charcoal cooking


OWNafter Raphael Rego’s departure from Brazil, the gourmet restaurant Oka became Épisodes, led by Guillaume Goupil. And its twin brother Fogo, located right next door… remains Fogo. The chef changed but was not named because the principle of cooking over hot coals still applies.

But the menu has found a new impetus, conducive to enjoying and sharing. And avocado, branded with fire as anything, is featured as one of the especially delicious new appetizers, a smashed guacamole style with a smoky flavor, to be enjoyed with delicious buckwheat crackers.
