Sebastian Lege: “I’m afraid I’m lost”
Make the perfect schnitzel! Even though it sounds easy to some people, Sebastian Lege’s latest task is definitely not easy. But of course giving up is not an option. Sebastian Lege conducted a survey, researching schnitzel variations in Vienna and Düsseldorf and trying to use innovative methods in the laboratory to develop a schnitzel that would impress star chefs and lovers.

What kind of meat is the tastiest? How to get perfect breading? Food expert Sebastian Lege has tested it and recommends:

Soaking the meat in milk or water and salt will make it juicier. Lege’s personal favorite: veal balls soaked in milk brine.

Add rice flour to the flour so that the dough sticks better.

Divide the sauce into ice cube trays, cool and pour over the warm schnitzel just before serving! So nothing is made easier.
