Arrival of Eugénie Béziat as head of the Espadon restaurant, at the Ritz Paris, on the 1stuh April 2022, could be considered a bug. No one expected a woman (the only one in the Parisian luxury hotel industry), young (42 today), to carry out the signature gastronomy traditionally experimented with by old Michelin-star backpackers – Michel Roth and Nicolas Sale are the latest. L’Espadon is not only one of the most exposed and expensive restaurants in the capital, with menu prices between 250 and 435 euros, but also belongs to the legendary restaurants. The Ritz was co-founded in 1898 by Auguste Escoffier, which codified French cuisine and changed mores, by offering, for example, à la carte dishes.
To be on par with the legend, Eugénie Béziat can only rely on her talent. He has not pledged allegiance to the baron of great chefs (Alain Ducasse, Yannick Alléno, etc.) and does not belong to the Meilleurs Ouvriers de France network. He’s also not part of the former “Top Chef” media tribe – he tried to get elected, but was unsuccessful. And this quiet little brunette is no social media star.
